So, this has been an interesting adventure for me. Going gluten free has made me an amazingly healthy eater. I have learned a lot about how to eat and what is what in the food world. It also brought to my attention the very real importance of protecting our food supply from one-sided commercial interests.
I have decided to start eating wheat again since I really have no health issues or allergies related to wheat. Wheat is not all that great a thing for our bodies, I am convinced. Today I added wheat back into my diet and sure enough I was hungry. It’s amazing, the body really is “addicted” to wheat. But in perspective – eating other foods have downsides. For example, rice has to much arsenic and potatoes raise your blood sugar to much. I guess my point is, everybody has to be careful of what they eat, in moderation and everyone has special health concerns. Listen to your body. And listen to it when it changes.
A special sympathy goes out to those with a wheat allergy. The psychological stress of having to check every label is real and well, downright exhausting. It slows one down, makes life a little harder. God Bless You.
